Add the diced onion and red bell pepper and cook for 4–5 minutes, until softened.
Add the minced garlic and cook for about 30 seconds.
Stir in the taco seasoning, cumin, smoked paprika, salt, and black pepper.
Cook the seasonings with the vegetables for about 30 seconds, stirring constantly.
Add the fire-roasted tomatoes with their juices and the chicken broth.
