Ingredients
  

  • 2 lbs boneless skinless chicken thighs (or breasts)
  • 1 tbsp oil reserved from sun-dried tomato jar
  • Salt black pepper, and 1 tsp Italian seasoning, to taste
  • 1 cup low-sodium chicken broth divided
  • 1/2 cup jarred sun-dried tomatoes in oil chopped
  • 4 cloves garlic minced
  • 1/2 tsp red pepper flakes
  • 1 cup heavy cream
  • 3/4 cup fresh Parmesan grated
  • 1/4 cup fresh basil chopped

Instructions
 

  • Pat chicken dry, season with salt, pepper, and Italian seasoning.
  • Sear chicken in sun-dried tomato oil until golden on both sides, then transfer to the crockpot.
  • Deglaze the skillet with a splash of broth and pour into the crockpot.
  • Add remaining broth, sun-dried tomatoes, garlic, and red pepper flakes around the chicken.
  • Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until chicken is fork-tender.
  • Stir in heavy cream and Parmesan, then let sit on warm for 15 minutes, stirring occasionally.
  • Top with fresh basil and serve immediately.

Notes

  • Always add the heavy cream and Parmesan only in the last 15 minutes to prevent the sauce from curdling.
  • LOW and slow (4-5 hours) gives the most tender chicken; HIGH (2-3 hours) works if you're short on time but watch breasts closely.
  • If the sauce separates on reheating, whisk in a splash of warm cream or broth over low heat to bring it back together.
