Ingredients
  

  • 1.5 lbs top sirloin steak cut into 1-inch cubes
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tsp fresh rosemary chopped
  • 1 tsp fresh thyme chopped
  • 3/4 tsp salt
  • 1/2 tsp coarse black pepper
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Pat steak cubes dry and season generously with salt and pepper, resting 15-20 minutes at room temperature.
  • Heat a cast iron skillet over high heat with olive oil until smoking hot.
  • Sear steak cubes in batches, in a single layer, for 1-2 minutes per side without crowding the pan.
  • Return all cooked steak to the pan, reduce heat to medium, and add butter, garlic, rosemary, and thyme.
  • Baste the steak bites with the melted garlic butter for about 1 minute until fragrant.
  • Stir in fresh parsley and serve immediately.

Notes

  • Never overcrowd the pan; sear in batches with visible space between cubes to avoid steaming the meat.
  • Add butter and garlic only in the final minute of cooking to prevent burning and bitterness.
  • Let the steak bites rest briefly before serving so the juices redistribute instead of spilling out when cut.
