- 4 boneless skinless chicken cutlets or 2 chicken breasts, sliced in half horizontally
- 1 cup all-purpose flour
- 2 large eggs beaten
- 1.5 cups panko breadcrumbs
- 1/2 cup grated parmesan cheese plus extra for topping
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1/2 cup olive oil for frying
- 1.5 cups red marinara sauce
- 1.5 cups mozzarella cheese shredded or sliced
- 1/4 cup fresh basil leaves for garnish
Slice or pound chicken breasts into even, thin cutlets.
