Ingredients

Main Ingredients:

  • 2 lbs ground beef 80/20
  • 1 cup breadcrumbs or panko
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/2 cup minced yellow onion
  • 3 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper

Ingredients (Glaze):

  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard
  • 1 tsp apple cider vinegar

Instructions

  • Soak breadcrumbs in milk for a few minutes until fully absorbed.
  • Add ground beef, eggs, onion, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper, mixing gently just until combined.
  • Shape the mixture into a freeform loaf on a parchment-lined, rimmed baking sheet.
  • Bake at 350°F for 35-40 minutes before glazing.
  • Whisk together ketchup, brown sugar, mustard, and apple cider vinegar, then brush generously over the loaf.
  • Return to the oven for 15-20 minutes, until internal temperature reaches 160°F.
  • Rest for 10 minutes before slicing and serving.

Notes

  • Never overmix the ground beef; combine gently just until no streaks remain to keep the texture tender.
  • Always rest the meatloaf for a full 10 minutes before slicing so the juices redistribute properly.
  • Confirm doneness with a meat thermometer, targeting a safe internal temperature of 160°F.
