Ingredients

  • 1.5 lbs ground beef 80/20
  • 1 white onion grated (for patties)
  • 1 white onion sliced (for gravy)
  • 1/2 cup breadcrumbs
  • 1/4 cup all-purpose flour
  • 2.5 cups beef broth
  • 2 tbsp fresh parsley chopped
  • Salt and black pepper to taste

Instructions

  • Mix ground beef, grated onion, breadcrumbs, salt, and pepper gently, then shape into oval patties.
  • Sear patties in a hot skillet until golden brown on both sides, then remove.
  • Caramelize sliced onions in the same pan, scraping up browned bits.
  • Sprinkle flour over onions and cook briefly, then whisk in beef broth until thickened.
  • Return patties to the pan and simmer gently until fully cooked through.
  • Garnish with fresh parsley and serve hot.

Notes

  • Grate the onion for the patty mixture rather than chopping it, since the released juices keep the meat moist.
  • Always deglaze the pan after searing to build a genuinely flavorful gravy from the fond.
  • Simmer patties gently in the gravy rather than at a hard boil, to keep the meat tender.
